The Beet is On!

You ever wonder what to do with these weird veggies? I never ate beets growing up. The only time I ever saw them was on a salad bar. I would always try them (they looked so cool and colorful) but never liked them. Even now when I see them in the market they kinda gross me out. The long part looks like a rat's tail to me!
When my sister was in town she taught me a fun recipe with beets that I love, so I'm going to share it with you :) I actually eat this for fun!!
I have no actual recipe. But basically I pealed and cut in half 5 beets. (if you don't want your nice cutting board to be permanently pink, cut them on a plate or something else :)) Then I steamed them (you could boil them too if you wanted). Then I got out my mini food-processor. I put a little less than 2 of the beets in the food processor with a small handful of cashews, a tablespoon of olive oil and 2 tablespoons of balsamic vinegar and blend it up. I repeated that until all the beets were beat :) haha!

It makes a really easy and yummy dip you can eat with chips or spread on bread or crackers. It's really healthy too!! Not to mention that it's HOT PINK! How many things that you eat are naturally hot pink? haha! It's a terrible picture, but you can see what it looks like below :)

Neat Beets!
A friend once told me that her doc prescribed her to eat one whole beet, cut-up (stalk, stem and all) and boiled because she was having gall-bladder problems- he was kinda a holistic type doc. She said she ate as much as she could and within a day or so "black bile" type stuff came out and from then on she didn't have any more gall bladder problems. Crazy huh?
That sounds like neat recipe... like for a baby-girl shower or something. Have you ever seen dragon fruit? Sometimes it has white flesh fruit inside and sometimes it is the CRAZIEST color pink you've ever seen... kinda like the beet, very bright and vibrant.

What does it taste like? I have no idea how to explain it... it's very unique... the basalmic vinegar gives it a pretty vinegar taste... but the cashews mellow it out a little bit... I have no idea how to explain it :) haha!

Campa Cola & Exploring :)

Today we had some things to do in the Central part of our city, so while we were there, we decided to take on some adventures :) Adventure #1 - the underground market. This market is pretty crazy. It's actually underground and has electronics & clothes mostly. They sell things pretty cheap, so it's an interesting place to go. Today we got an 64 Gig flash drive/pen drive for about $5. Crazy hunh? Here's Adam and Aashini in one of the stores. They're all REALLY small stores - about 10x10 feet I would guess (but I'm really bad at guessing that sort of stuff :)) We go here a lot to get things, so I guess it's not a new adventure, but an adventure nonetheless. Before the next part of our adventure (the real part of our adventure) we stopped for lunch. Aashini will always eat at McDonalds, so that's where we went :) They just started selling chicken nuggets here at McDonalds, so it's super easy to get her to eat there :) This McDonald's had high chair

Starbucks!

 Starbucks opened in our city last night!!  I'm not a huge coffee drinker... but I was excited about the opening!!  (I think I like Starbucks because of all the green! haha!... Aashini and Diya think the mermaid on the logo looks like me... haha! Maybe it's the weird wavy hair :)... not sure :) ) Anyway, we got there and the line was SUPER long!  The wait time was about 45 minutes!!!  There were so many people there!!!  I tried to get a pic of all the people... (that's why this picture is at an annoying angle... Funny Things - Age Appropriate?
