Mangoes!!

OK, so this may not be that exciting to you, but our neighbors have a mango tree!!! Last year, it didn't have mangoes, but this year it does!! They just started growing and they're growing fast! I can't wait! Mango season is quickly approaching! YUM!! Anybody have some good mango recipes?
I like to make Mango smoothies... but here's my favorite Mango recipe :) (If you don't have access to mangoes, or don't want to spend the money, Apples work great in this recipe) :)
Mango Cobbler
Preheat oven to 350 degrees
TOPPING
¼ c Flour
¾ c Oats
¾ c Brown Sugar
1 tsp Cinnamon
½ c Butter
Optional – chopped walnuts as desired

Slice mango fairly thin to cover the bottom of the pan – depending on the amount of mango you want. (if you want apple, do the same thing… peel it if you don’t want peel… and you can also do a mix of mango and apple). I can't remember how long to cook it - I think about 15 minutes :)

nathan loves mangoes mashed up with apples and oatmeal and yogurt - I toss in some juice or milk, too, if it needs thinning out. baby smoothie!

i had a mango smoothie today with peaches, yogert and goji from tropical smoothie. i'm usually not a mango person, but it was really good!

Mango cobbler! Wowzer! I'll have to try that out. That's another one of my garden dreams--having a lovely fruit tree in the back yard that the kids could look forward to grabbing a snack from every day. Very cool.

how great! i hadn't ever thought to do a mango cobbler! we have two mango trees in the front yard. the monkeys tend to get them before we can though. so i still might have to go to the market to buy them. thanks!

One of my FAVE recipes for Mangos is Mango Salsa!! Dice red onions, cilantro, mangos, add corn, black beans and lime juice...a little salt and pepper YUMMMMMMY! Chill for at least an hour before serving to blend the juices....I like it with grilled chicken and rice...sooooooooo yummmy!

Cooking!

Cooking is sooo much harder here. THis is how you "puree" vegetables when you don't have a blender or food processor (or power). Some people have those things, but most people don't. This is my friend Gita. She's mashing up some onions. It's a marble slab that's not polished and they use a big rounded rock and just roll/mash! It's cool!!

Protesting

There's some political stuff going on in our city (and now the country) right now. People are peacefully fighting against corruption. It's been very interesting to follow. Tonight there was some protesting in our neighborhood. Here are some more protesting pictures. There will probably be more protesting to come... we'll see what happens!

Funny Things 2 - American Fair Edition

We just got back from Roadtrip #8 in Macon, GA. It was an awesome trip!! So, before we head out on the next trip, we went to the North Florida Fair! The fair is always famous for it's fried foods... they fried everything!!... They had fried/breaded zucchini, Mushrooms, Broccoli, Cauliflower, Onions, green tomatoes, okra, pickles, etc :) I had a lot of it too - YUM! Now, I'd heard of fried Snickers & twinkies (which they had) but they also had FRIED OREOS & PEANUTBUTTER CUPS :) The fair was cool. They had a shark show and a sea lion show... but our favorite was the pig races :) haha!!! It was hilarious!! Aashini was close up to the race until the pigs came - then she crawled up into Adam's lap really fast :) (as seen below) :) Pig races! haha! Cracks me up!
